Intensificação do processo de hidratação e fortificação do trigo mediante operação periódica

Resumo: O trigo é o terceiro cereal mais produzido no mundo, considerado uma das principais fontes alimentares da humanidade. Diante da representatividade mundial do trigo, estudos voltados para o processamento do grão e a investigação dos aspectos nutricionais durante o processo, se tornam interessantes. Diante disso, o objetivo desse trabalho foi estudar a hidratação e a fortificação do trigo, mediante operação isotérmica e periódica. Para alcançar esse objetivo, o trabalho foi dividido em quatro capítulos: Revisão de literatura; Estudo cinético e modelagem matemática da hidratação do trigo; Intensificação da hidratação por operação periódica; Fortificação do trigo na hidratação isotérmica e periódica. O CAPÍTULO 1 consistiu de uma revisão de literatura que apresentou informações sobre o trigo, como composição, estrutura e processo. Além disso, forneceu informações relevantes das técnicas empregadas para intensificação do processo de hidratação de grãos, bem como o aspecto nutricional desta etapa do processo. Por fim, revisou a modelagem matemática como ferramenta para descrever fenômenos de transferência de massa e difusão, no estudo da hidratação e fortificação de grãos. A partir do levantamento bibliográfico, observou-se que a hidratação de trigo vem sendo explorada ao longo dos anos. No entanto, o estudo desenvolvido, apresentado no CAPÍTULO 2 apresentou informações pioneiras sobre a hidratação de trigo, como análises morfológicas da estrutura do amido do grão submetido à hidratação; análise da dinâmica da absorção de água, a partir de um agente traçador (corante); e estimativa das propriedades termodinâmicas envolvidas no processo. Durante a hidratação, houve aumento no tamanho dos grânulos de amido. Porém, a gelatinização parcial foi observada apenas à 60ºC. A hidratação com agente traçador indicou que a água difundiu para o interior do grão através da micrópila e depois pelo pericarpo do grão, por capilaridade. E por fim, a estimativa das propriedades termodinâmicas sugeriu que o processo de hidratação de trigo é endotérmico, não espontâneo e dependente da temperatura. Por sua vez, no CAPÍTULO 3 a operação periódica foi investigada como técnica de intensificação do processo de hidratação do trigo. O principal objetivo foi comparar a eficiência da hidratação isotérmica (22ºC, 30ºC e 40ºC) com a hidratação periódica (amplitude de 10°C e 20°C), a partir do ajuste matemático de modelos cinéticos. Dentre os modelos cinéticos que foram ajustados, o modelo de difusão generalizado apresentou o melhor ajuste com desvio máximo de 7%. Os resultados obtidos comprovaram que a operação periódica é uma estratégia promissora para a intensificação do processo de hidratação, uma vez que aumentou a taxa de transferência de massa de 18% e 26%, dependendo da condição da hidratação, além de reduzir o tempo de hidratação em 33%. Por fim, no CAPÍTULO 4 foi explorado o aspecto nutricional da hidratação do trigo, em relação ao Zinco. A partir deste estudo, constatou-se uma perda média de Zn de 33% em grãos de trigo hidratados em água pura, em condição isotérmica e periódica. Com a fortificação do trigo, com Zn, durante a hidratação, foi possível aumentar o conteúdo de Zn no grão de 8 a 9 vezes. Além disso, o perfil de incorporação do Zn no trigo foi satisfatoriamente representado pelo modelo de difusão. A partir dos resultados obtidos nessa tese, concluiu-se que a hidratação do trigo pode ser intensificada com a operação periódica e a fortificação com Zn, no processo, se torna uma opção vantajosa para a valorização nutricional do grão Abstract: Wheat is the third most produced cereal in the world, considered one of the main food sources of humanity. In view of the global representativeness of wheat, studies on grain processing and the investigation of nutritional aspects during the process become interesting. Therefore, the objective of this work was to study the hydration and fortification of wheat, by means of isothermal and periodic operation. To reach this goal, the work was divided into four chapters: Literature review; Kinetic study and mathematical modeling of wheat hydration; Intensification of hydration by periodic operation; Fortification of wheat in isothermal and periodic hydration. The CHAPTER 1 consisted of a literature review that presented information about wheat, such as composition, structure and process. In addition, it provided relevant information on the techniques employed to intensify the grain hydration process as well as the nutritional aspect of this process step. Finally, he reviewed mathematical modeling as a tool to describe mass transfer and diffusion phenomena in the study of hydration and fortification of grains. From the bibliographical survey, it was observed that the hydration of wheat has been explored over the years. However, the study developed, presented in CHAPTER 2 presented pioneering information on the hydration of wheat, as morphological analyzes of the starch structure of the grain submitted to hydration; analysis of the dynamics of water absorption, from a tracer agent (dye); and estimation of the thermodynamic properties involved in the process. During hydration, there was an increase in the size of the starch granules. However, partial gelatinization was observed only at 60 ° C. Hydration with tracer agent indicated that the water diffused into the grain through the micropyle and then through the grain pericarp by capillarity. Finally, the estimation of the thermodynamic properties suggested that the wheat hydration process is endothermic, non-spontaneous and temperature dependent. In turn, in CHAPTER 3 the periodic operation was investigated as a technique to intensify the process of hydration of wheat. The main objective was to compare the efficiency of isothermal hydration (22ºC, 30ºC and 40ºC) with periodic hydration (amplitude of 10°C and 20°C), from the mathematical adjustment of kinetic models. Among the kinetic models that were adjusted, the generalized diffusion model presented the best fit with maximum deviation of 7%. The results obtained showed that the periodic operation is a promising strategy for the intensification of the hydration process, since it increased the mass transfer rate of 18% and 26%, depending on the hydration condition, besides reducing the hydration time in 33%. Finally, in CHAPTER 4 the nutritional aspect of the hydration of the wheat was explored, in relation to Zinc. From this study, an average Zn loss of 33% was found in wheat grains hydrated in pure water, in an isothermal and periodic condition. With the fortification of wheat with Zn during hydration, it was possible to increase the Zn content in the grain 8 to 9 times. In addition, the Zn incorporation profile in wheat was satisfactorily represented by the diffusion model. From the results obtained in this thesis, it was concluded that the hydration of the wheat can be intensified with the periodic operation and the fortification with Zn in the process, becomes an advantageous option for the nutritional valorization of the grain
