    Renda e a escolha de dieta : uma abordagem por estimação de demanda

    Abstract
    Resumo: Oobjetivo do trabalho é analisar a relação entre a renda e a qualidade da dieta, investigando como diferentes níveis de renda e desigualdade podem impactar no consumo de uma dieta saudável. Para isso serão utilizados os microdados das Pesquisas de Orçamento Familiares (POF) dos anos de 2002–2003, 2008–2009 e 2017–2018 e a demanda para quatro grupos alimentícios definidos pela classificação NOVA será estimada pelo modelo Quadratic Almost Ideal Demand System (QUAIDS). Os resultados indicam uma elasticidade renda unitária para a demanda de alimentos minimamente processados e próxima a unidade para o grupo dos ultraprocessados, o efeito do preço se mostrou maior sobre o grupo dos ingredientes processados enquanto os outros grupos se mostram inelásticos. Ainda, as variáveis sociodemográficas indicam que educação, cor, gênero e localização impactam a escolha da dieta. Da mesma forma, a renda familiar possuí relação positiva com o consumo de ultraprocessados, por meio da renda per capita e da desigualdade.
     
    Abstract: The objective of the work is to analyze the relationship between income and diet quality, investigating how different income levels and inequality can impact the consumption of a healthy diet. To this purpose, microdata from the brazilian Family Budget Surveys (POF) from the years 2002-2003, 2008-2009, and 2017-2018 will be used, and the demand for four food groups defined by the NOVA classification will be estimated using the Quadratic Almost Ideal Demand System (QUAIDS) model. The results indicate a unitary income elasticity for the demand for in natura foods and close to unity for the ultraprocessed group, the price effect was found to be greater on the processed ingredients group, while the other groups showed inelastic demand. Furthermore, sociodemographic variables indicate that education, race, gender, and location impact dietary choices. Similarly, family income has a positive relationship with the consumption of ultraprocessed foods, through both per capita income and inequality.
