Influência da polpa de banana (Musa cavendishii) verde no comportamento reológico, sensorial e físico-químico de emulsão

Resumo: A influência da polpa de banana verde (PBV), no comportamento reológico,sensorial e físico-químico de emulsão foi investigada no presente trabalho. Cincoformulações foram desenvolvidas, utilizando o delineamento para superfícieslimitadas e misturas, com as seguintes proporções de água/óleo/PBV:F1(0,10/0,20/0,70), F2(0,20/0,20/0,60), F3(0,10/0,25/0,65), F4(0,20/0,25/0,55) e F5(0,15/0,225/0,625). As formulações obtiveram altos teores de sais minerais e baixovalor calórico. Apresentaram comportamento não-Newtoniano pseudoplástico a 10 e25oC e os parâmetros reológicos foram bem representados pelo modelo deHerschel-Bulkley. As formulações com maior quantidade de polpa, (F1 e F3) foramas que apresentaram maior viscosidade aparente e maior tensão inicial. PelaMetodologia de Superfície de Resposta, descrita pelo modelo quadrático, foiverificado que a polpa de banana verde teve influência significativa no aumento datensão inicial (?OH) e da viscosidade aparente (?ap), enquanto que o óleo contribuiupara o aumento do coeficiente de consistência (K) e a água, do índice decomportamento (n) das emulsões. As curvas de fluxo para as emulsões após 15 diasde armazenamento apresentaram histerese e as curvas decrescente foram melhorajustadas pelo modelo de Herschel-Bulkley, mostrando também comportamentopseudoplástico, porém, com altos valores de tensão inicial. Todas as emulsõespermaneceram estáveis até 30 dias com surgimento de retrogradação após esseperíodo para F1, F2 e F3 e as amostras F4 e F5 permaneceram estáveis mesmoapós 60 dias de armazenamento. As amostras F1 e F3 apresentaram-se maispróximas da coloração da maionese comercial precedidas das formulações F5 e F2.Não houve diferença significativa entre as formulações para o sabor geral e a F3 foipreferida pelos julgadores pelo teste de preferência da Escala Hedônica. A aceitaçãodas emulsões foi confirmada pela atitude de compra em que 75% dos provadorescomprariam o produto. Abstract: The influence of green banana pulp (GBP) on the rheological behaviour, sensoryevaluation and chemical characteristics of an emulsion was investigated in this work.Five formulations were developed, according to design for constrained surfaces andmixtures, with the following proportion, respectively: water/oil/GBP:F1(0,10/0,20/0,70), F2(0,20/0,20/0,60), F3(0,10/0,25/0,65), F4(0,20/0,25/0,55) andF5 (0,15/0,225/0,625). The samples presented high values for minerals salts and lowcalories. The emulsions have shown a shear-thinning behaviour at 10 and 25oC andwere well described by the Herschel-Bulkley model. The formulations with high pulpcontent (F1 e F3) presented higher apparent viscosity and yield stress. Following theresponse surface methodology, described by the quadratic model, could be noticedthat the GBP had a significant influence on the rise of yield stress and apparentviscosity, while the oil increased the consistency coefficient and the water contributedto the rising of the flow behaviour index of the emulsions. The flow curves to theemulsions after 15 days of storage presented histeresis and the down curves werewell fitted by the Herschel-Bulkley model, also had a shear-thinning behavior,nevertheless, the rheological parameter yield stress was very high to those formulas.All samples presented stability until 30 days with a retrodegradation after this periodto the formulas (F1, F2 and F3) while F4 and F5 stayed steady until after 60 days ofstorage. F1 e F3 samples presented closer to the traditional mayonnaise colorattribute followed by F5 e F2. The overall flavour had no statistical difference to allsamples and F3 had the better score to hedonic scale. The acceptation of theemulsion was confirmed by purchase intent where 75% of the consumers would buythe product.
