Resumo: O objetivo desse trabalho foi estudar o processo de desidratação do fruto manga (Mangifera indica L.)variedade Tommy Atkins previamente adoçado com edulcorantes ou agentes de corpo. O pré-tratamento osmótico em conjunto com a secagem convectiva é um método que visa obter frutas commelhor estabilidade de cor, textura e aumento da vida de prateleira. A manga é uma fruta que possuipouca quantidade de fibra aparente e alto teor de açúcares. Para o pré-tratamento osmótico foram imersos cubos de manga (de 1 cm de aresta) em solução de sacarose a 50% (p/p), sorbitol a 50%(p/p) e adoçante composto com estévia a 50%, na proporção amostra/solução de 1:3 (p/p), a 50°C durante duas horas. Em seguida as amostras foram desidratadas em estufa a 60°C até atividade de água entre 0,6 e 0,7. A avaliação sensorial foi realizada por teste de análise descritiva quantitativa. Nas determinações físico-químicas verificou-se que as mangas se encontravam adequadas ao processamento. Os produtos pré-tratados com sacarose tiveram uma redução médiade 17,72% no teor de umidade e o tratado com sorbitol uma redução de 15,72% enquanto o tratamento osmótico com estévia foi de 1,15%, o que não representou redução significativa da umidade. Analisando as cinéticas de desidratação osmótica observou-se que a redução de massa foi proporcional à retirada de água, sendo os valores de perda de água superiores aos da perda de massa, e que a manga tratada com sacarose incorporou mais sólidos que a tratada com sorbitol. Nas condições estudadas foi observada uma tendência favorável ao uso do sorbitol como agente desidratante, visto que foi mais eficiente na retirada de água das amostras do que a sacarose. Após a secagem houve um decréscimo médio de 55% da umidade da amostra tratada com sacarose e 56% da com sorbitol em relação a fruta in natura. Os valores de coeficiente de difusividade efetiva se mantiveram na mesma ordem de grandeza. No final do pré-tratamento e da secagem houve uma maior tendência ao escurecimento, redução do valor L* em relação às mangas in natura. A análise sensorial mostrou diferença entre as amostras no parâmetro sabor doce o mesmo não ocorrendo para a acidez e textura que foram iguais estatisticamente. Abstract: The objective of this work was to study the process of dehydration of the fruit mango (Mangiferaindica L.), variety Tommy Atkins, previously sweetened with artificial sweeteners or agents of body.The osmotic pre-treatment together with the convection drying is a method that aims at achieving fruits with better stability in respect of color, texture and increase of shelf life. The mango is a fruit that possesses some fiber and a high content of sugars. For the osmotic pre-treatment the mango cubes (of 1 cm of edge) have been immersed in solutions of sacarose 50% (w/w), sorbitol 50% (w/w) and sweetners with stevia in the ratio sample/solution of 1:3 (w/w), at 50°C during two hours. After that the samples have been dehydrated in a desiccating chamber at 60°C until water activity between 0,6 and0,7. The sensory evaluation was made by quantitative descriptive analysis. In the physico-chemical determinations it was verified that the mangos were adequate to processing. The products pre-treated with sacarose have had an average reduction of 17,72% in the humidity level. The ones treated withs orbitol showed a humidity reduction of 15,72%, while the osmotic treatment with stevia showed1,15%, this last one not representing a significant humidity reduction. By analyzing the kinetic of osmotic dehydration it was observed that the weight reduction was proportional to the water with drawal, being the values of loss of water superior then the ones of loss of weight, and that the mango treated with sacarose incorporated more solids than the one with sorbitol. In the conditions studied, a favorable trend to the use of sorbitol as a dehydrating agent was observed, since it was more efficient in the water with drawal than sacarose. After the drying there has been an average decrease of 55% of the humidity of the sample treated with sacarose and 56% of the one with sorbitolin relation to the weight of the fruit in natura. The values of coefficient of effective diffusivity remained in the same order of magnitude. At the end of the pre-treatment and drying, there was a bigger tendency to browning reduction of value L * in relation to mango in natura. The sensory analysis showed significant difference between the samples in the attribute sweet flavor. For acidity and texturethere was no significant difference.
