Comida, história e cultura nas festas gastronômicas de Francisco Beltrão - PR (1996-2010)

Abstract

Resumo: O presente trabalho, "Comida, História e Cultura nas Festas Gastronômicas de Francisco Beltrão – PR (1996-2010)", é o resultado de pesquisas acerca de cinco festas gastronômicas realizadas no município de Francisco Beltrão, Sudoeste do Paraná, quais sejam: a Fest Peru, da Comunidade da Água Branca; a Festa Italiana da Comunidade de Secção Jacaré; a Polsky Festyn (Festa Polonesa) da Comunidade de Secção Progresso; a Fest Vin da Comunidade do Km 20; e a Deutschfest (Festa Alemã) da Linha Jacutinga. Com exceção da Fest Peru, todas as outras festas fazem parte do "Projeto Nossas Raízes", instituído pelo Departamento de Cultura da Prefeitura Municipal de Francisco Beltrão, em 1997. Por meio do Projeto, buscou-se a preservação e a divulgação do patrimônio cultural do município, mediante as contribuições das principais etnias povoadoras e formadoras, a italiana, a alemã e a polonesa. A partir das falas dos idealizadores e organizadores destas festas, percebemos como foi fundamentada a adoção dos pratos típicos dentro do município, por quais modificações e permanências passaram e quais as impressões destes atores sobre estas festividades. As cinco festas pesquisadas fazem parte do calendário de eventos do município, portanto, pertencem ao patrimônio cultural, gustativo e imaterial de Francisco Beltrão. Esse patrimônio é de suma importância para a história e a memória da cidade, pois remete a noção de herança, de algo que uma sociedade quer deixar para a subseqüente. Além disso, como "a cozinha é um microcosmo da sociedade", o estudo deste patrimônio gustativo é relevante para entendermos a sociedade beltronense. Ainda, a partir das festas, inseridas na perspectiva da história e cultura da alimentação, podemos constatar mudanças e inovações, constâncias alimentares que se tornam tradições, e estas reforçam sentimentos de pertencimento. Também pelos folders das festas gastronômicas inseridas no "Projeto Nossas Raízes" podemos ver que a intenção da prefeitura municipal é a de agregação de renda nas comunidades, ou seja, que a partir das festas eles possam gerar lucros que sejam revertidos para a comunidade e que nelas (e a partir delas) possam comercializar os produtos plantados e produzidos pelos próprios moradores, gerando lucros para as famílias. Então, as festas atraem turistas para as comunidades, em função dos cardápios oferecidos, o que divulga as próprias culturas locais e o município como um todo. Quanto a Fest Peru, constata-se que a carne desta ave foi alçada a prato principal da comunidade para "tornar-se uma tradição", portanto, é uma tradição inventada, pois não liga-se ao cardápio de italianos, alemães ou poloneses.

Abstract: The present paper, ¡°Food, History and Culture in the Gastronomic Parties of Francisco Beltrao . PR (1996-2010)¡±, is the result of researches about five gastronomic parties held in the township of Francisco Beltrao, South-West of Parana, they are: the Turkey.s Party, of White Water Community; the Italian Party of Alligator.s Section; the .Polsky Festyn. (Polish Party) of Progress Section Community; the .Fest Vin¡± of Km 20 Community and the .Deutschfest. (German Party) of Jacutinga Line. Except the Turkey.s Party, all others parties does sit of .Project Our Roots., established by the Department of Culture of Town Hall of Francisco Beltrao, in 1997. Through the Project, search to preserve and expose the cultural heritage of the township, by means the contributions of the principals ethnic groups of settlement and forming: the italian, the german and the polish. Through of evidences of the idealizers and organizers of these parties, perceived how happened insertion of typical dishes in the township, theirs changes and continuities and too the impressions of actors on these festivity. The five parties explored does sit of calendar of events in the township, so, belong to the cultural heritage, taste and immaterial of Francisco Beltrao. This heritage is essential for a history and memory of township, because forward to notion of legacy, something that an society pass to other. And again, ¡°the kitchen is a microcosm of society¡±, then the study this taste heritage is important to understand a beltronense society. Even, about the parties, inserted into the perspective of history and culture of food, we can see changes and innovations, constancies food wich become traditions, and reinforce these feelings of belonging. Too through folders of gastronomic parties the inside of .Project Our Roots. we can see that objective of Town Hall is the aggregate income in the communities, that is, from the parties they can generate profits to communities and the in them and from them to sell products grown and produced by the occupants, generating profits for families. So, the parties attract tourists for communities, because of menus offered, wich expose its own local cultures and the township as a whole. As for Turkey.s Party, note-is that the meat this poultry was considered the principal dish of the community to ¡°become a tradition¡±, so, is an invented tradition, because doesn.t link to the menus of italian, german or poles.
