Elaboraçao do pao de mel com fibra alimentar proveniente de diferentes graos, sua caracterizaçao físico-química, microbiológica e sensorial

Resumo: O mel, produto do metabolismo da abelha (Apis mellifera), é a única substância com poder adoçante que pode ser armazenado e usado como matéria-prima produzida na natureza. As fibras alimentares são necessárias para auxiliar todas as substâncias alimentares a moverem-se através do sistema digestivo de maneira adequada. As fibras alimentares estão contidas em várias fontes naturais, tais como a linhaça e o farelo de trigo. A linhaça (Linum usitatissimum) é uma semente chata, ovalada, pontiaguda, e de cor marrom avermelhada e responde por cerca de 28% de fibras alimentares do seu peso seco. O farelo de trigo é a camada externa do grão de trigo e é um subproduto rico em fibras insolúveis. O objetivo deste trabalho foi a elaboração do pão de mel enriquecido com fibras alimentares, com o uso do farelo de trigo e da linhaça. O mel, matéria-prima básica do alimento desenvolvido neste trabalho, teve sua qualidade avaliada, através da análise dos seguintes parâmetros e metodologia: umidade, cinzas, acidez e atividade antimicrobiana segundo os métodos descritos na AOAC (2000); o pH e as reações de Lund, Fiehe e Lugol de acordo com as normas analíticas do IAL (1985). O valor encontrado para a umidade foi de 17,20% que se aproximou com as pesquisas realizadas por outros autores com diferentes tipos de mel. O resíduo mineral fixo apresentou um valor de 0,3% estando entre os valores comuns citados. A acidez foi de 23,62 meq/kg. Para verificação de adulteração do mel utilizado neste trabalho: a reação de Lund indicou que o mel pesquisado é puro, a reação de Fiehe comprovou ausência de adição de açúcar e a reação de Lugol não constatou a presença de glicose e amido. A análise microbiológica apresentou ausência de Salmonella sp em 25 g de alimento. O pão de mel foi elaborado com diferentes níveis de substituição 5%, 10%, 15% e 20% de farinha de trigo pelo farelo de trigo para definir a concentração de melhor aceitabilidade, que foi de 20%. Elaborou-se então o pão de mel com diferentes tipos de fibras (farelo de trigo, linhaça, farinha de soja e aveia em flocos) e o grupo de julgadores definiu que as fibras de melhor aceitabilidade foram a do farelo de trigo e a de linhaça. Desta forma, foram obtidas as especificações de um padrão de qualidade para o mel empregado, e para o pão de mel enriquecido com fibra alimentar, a comprovação do potencial do farelo de trigo e da linhaça como produto de alto teor de fibras. O pão de mel enriquecido com farelo de trigo apresentou 6,04% de fibra alimentar e com linhaça, 8,23%; ambos em base seca. Os resultados do teste de aceitabilidade do pão de mel com fibra alimentar foram em relação ao sabor: 82,93% para o pão de mel enriquecido com farelo de trigo e 93,18% para o enriquecido com linhaça. A aceitabilidade em relação ao produto de uma maneira geral para o farelo de trigo e para a linhaça apresentou 85,37% e 93,18%, respectivamente. Abstract: The honey, metabolism bee (Apis mellifera) product, is the substance unique with sweetener power that can be stored and used as raw material producing in nature. The alimentary fibers are indispensable to help all the alimentary substances to put in motion through the digestive system proper way. The alimentary fibers can be found in natural sources like wheat bran and flaxseed. The flaxseed (Linum usitatissimum) is the flat seed, egg-shaped, and pointed of brown reddish color and have around 28% of alimentary fibers of dry weight. The wheat bran is the external layer of wheat grain and is the rich subproduct in insoluble fibers. The objective of this research was the elaboration of honey bread enriched with alimentary fibers, with the application of wheat bran and flaxseed. The honey's quality was evaluated by the following parameters and methodology: moisture, ash, acidity and microbiology as described in AOAC methods (2000); the pH and the Lund, the Fiehe and the Lugol's reactions according to IAL (1985). The value found for the moisture was 17,20% what is close to other authors' researches with different kinds of honey. The ash presented the value of 0,30%, being among the values commons cited. The acidity was 23,62 meq/kg. To check the honey adulteration: the Lund's reaction assured the purity of honey, the Fiehe's reaction proved absence of sugar addition and the Lugol's reaction didn't evidence the appearance of glucose and starch. The microbiological analysis showed absence of Salmonella sp. in 25 g of food. The honey bread was elaborated with different level of replaced (0%, 5%, 10%, 15% e 20%) wheat flour to wheat bran, to define the concentration of better acceptance what was 20%. After, the honey bread was elaborated with different kinds of fibers (wheat bran, flaxseed flour, oat in flakes and soybean flour), and the panelists defined that the fibers of better acceptance were wheat bran and flaxseed. This way, the specification of the quality standard was obtained for the used honey and for the honey bread enriched with alimentary fiber, the proof of potential of wheat bran and flaxseed as product with high fiber tenor. The honey bread enriched with wheat bran, presented 6,04% of alimentary fiber and with flaxseed, 8,23%; both in dry base. The results of the taste acceptance's test of honey bread with fiber were 82,93% to the honey bread enriched with wheat bran and 93,18% to the one enriched with flaxseed. The acceptance regard to the product in the general way to the wheat bran and to the flaxseed presented 85,37% and 93,18% respectively.
