Determinação da idade ideal de abate de frangos de corte, considerando-se os teores de umidade, proteina e extrato etereo da carcaça

Resumo: Este trabalho teve por objetivo determinar a idade ideal de abate de frangos de corte através da composição química dos músculos da coxa (Gastrocnemius - Peroneus) e do peito (Pectoralis thoracica). As determinações de umidade proteína e extrato etéreo dos músculos foram feitas semanalmente do 1º ao 63º dia de idade. A proteína e a umidade foram considerados os principais resultados na avaliação. Considerando a umidade, foi observada uma diminuição significativa (P<0,05) do 1º ao 63º dia de idade, tanto no macho como na fêmea. Houve um aumento acentuado no nível de proteína da coxa (P<0,05) do 1º para o 7º dia de idade. Após o 7º dia foi observado um aumento gradativo até o 28º dia (P>0,05), sendo que deste para o 35º dia ocorreu um acréscimo significativo (P<0,05), seguido por uma estabilização ate o 63º dia, em ambos os sexos. Nos músculos do peito, foi observado um aumento significativo no nível de proteína (P<0,05) do 1º para o 14º dia de idade, do 14º ate o 42º dia houve uma elevação gradativa não significativa estatisticamente (P>0,05). Entre o 42º e o 49º dia houve um aumento significativo (P<0,05). Após o que o nível de proteína permaneceu sem mudanças significativas até o 63º dia. Com respeito a gordura, observou-se uma certa estabilidade entre os resultados, com tendência a um ligeiro declínio. Os dados permitiram concluir que os frangos de corte machos devem ser abatidos aos 42 dias de idade, enquanto que, a melhor idade para o abate das fêmeas deve ser aos 49 dias de idade Abstract: The experiment was conducted in order to determine the broilers slaughter ideal age through leg (Gastrocnemius Peroneus) and breast (Pectoralis thoracia) muscles chemical compositions. Moisture, crude protein and ether extract determinations from the muscles were done weekly from the first to the sixty third days of age. Crude protein and moisture were considered the main results in the evaluation. Considering the moisture, it was observed a significant diminution (P<0,05) from the 1st to the 63rd day of age, in both male and female. There was a marked increase on leg muscle protein level (P<0,05) from 1st to 7th day of age. After the 7th day it was observed a gradative increase until 28th day (P>0,05). Subsequent this age, there was a significative increase (P<0,05) up to 35th day, followed by a stabilization until 63rd day, either for male and female. It was observed a significant protein level increase (P<0,05) from the 1st to the 14th day in the breast muscle. From 14th to 42nd day, ocurred a gradative increase, and a significative increase (P<0,05) between 42nd and 49th days. After that the protein level remained without significative changes up to the 63rd day. Considering ether extract, it was observed small variations among the values, which tended to show a non significative decline. The results showed that the male broilers should be killed at 42 days of age. However the best age to females slaughter should be at the 49th day age
