Biofilme de blenda de fécula de batata e celulose bacteriana na conservação de fruta minimamente processada

Resumo: A eficiência dos biofilmes comestíveis está ligada às propriedades dos biopolímeros utilizados como base. Os polissacarídeos de origem microbiana apresentam-se como nova perspectiva, na influencia das propriedades de barreira e mecânica dos biofilmes e, auxilio no método de conservação. O objetivo deste trabalho foi avaliar o efeito de biofilme formado de blenda de fécula de batata e celulose bacteriana na conservação de fruta minimamente processada. O trabalho foi desenvolvido em três etapas: na primeira, foi analisada à influência dos minerais K, Na, Fe, Mg, P, S-SO4 -2, B, NTK, N-NO3 - e N-NH4 +, na rodução de celulose bacteriana, em cultivo de água de coco de fruta madura e verde, utilizando planejamento fatorial fracionado 27-2. Os minerais K e Na foram quantificados por fotometria de emissão de chama (FEP), Fe e Mg por espectrofotometria de absorção atômica (AAS), P por espectrofotometria absorção molecular UV-VIS (MAS), S-SO4 -2 por fotocolorimetria por sulfato de bário, B pelo método Azometina-H, NTK pelo método Kjeldahl, N-NH4 + e N-NO3 - determinados por destilação de vapor, com óxido de magnésio (MgO) e liga de Devarda, respectivamente. Na segunda etapa foi realizada a produção e caracterização de biofilmes formados por blenda de fécula de batata e celulose bacteriana, por planejamento de modelo de mistura ternária. Os biofilmes foram caracterizados segundo propriedades físicas, químicas e de barreira. Na terceira etapa foi realizada a aplicação dos biofilmes em morangos minimamente processados, e analisados os indicadores de qualidade (massa fresca, sólidos solúveis totais (SST), acidez total titulável (ATT), razão entre SST e ATT, pH, firmeza, atividade de água (Aw), contagem total de mesófilos aeróbios, compostos fenólicos, antocianinas, antioxidantes, vitamina C, cor, atividade respiratória de CO2 e O2). A maior produção de celulose bacteriana, 6 g.L-1, foi verificada nos fermentados com água de coco de fruta adura, adicionada de KH2PO4, FeSO4 e NaH2PO4 mantidos sob agitação. Houve maior consumo de Na e N-NO3 - tanto nos processos fermentativos de água de coco de fruta madura quanto verde. A produção de biofilmes pode ser feita pelo método de mistura, configurando uma matriz coesa, com interações entre os componentes. Biofilmes com maior concentração de fécula de batata apresentaram maior densidade, gramatura, opacidade, solubilidade e umidade. A celulose bacteriana promoveu biofilmes espessos, com índice de intumescimento mais rápido, maior taxa de permeabilidade ao vapor de água e favoreceu a redução da umidade da monocamada. Biofilmes com maior concentração de glicerol são hidrofílicos. A aplicação de biofilmes em morango cv Festival, com composição 47,25% de fécula de batata, 35,25% de celulose bacteriana e 17,5% de glicerol, foi eficiente nos indicadores de massa fresca até 120 horas e, sólidos solúveis totais, acidez total titulável, relação entre sólidos solúveis totais e acidez total titulável, compostos fenólicos, antioxidantes, croma a*, croma b*, contagem de mesófilos aeróbios totais até 192h. A celulose bacteriana pura mostrou ser eficiente como cobertura nos parâmetros perda de massa até 144h e pH, firmeza, atividade de água, antocianinas, contagem de mesófilos aeróbios totais e atividade espiratória CO2 até 192h. Portanto, a aplicação de biofilmes formados por blenda de fécula de batata e celulose bacteriana oferece potencial de utilização em morangos conservados por métodos ombinados (biofilme e processo de refrigeração), podendo aumentar a estabilidade física, química e microbiológica de tais produtos. Além disso, podem favorecer a aceitação do consumidor pela melhoria da aparência e manutenção de suas propriedades. Assim, a aplicação de biofilmes formados por blendas de fécula de batata e celulose bacteriana podem ser satisfatoriamente ser empregados como revestimento protetor sobre morangos. Abstract: The eatable biofilm efficiency is connected to the biopolymers properties used as base. The microbial origin polysaccharides show themselves as a new perspective, in the influence of the barrier properties and mechanical of the biofilms and, assistance in the conservation method. The mainly purpose of this paper was evaluate the biofilm effect made by the potato starch blend and bacterial cellulose in the conservation of the minimally processed fruit. The paper was developed in three steps: in the first, it was analyzed the influence of the minerals K, Na, Fe, Mg, P, S-SO4 -2, B, NTK, N-NO3 - and N-NH4 +, in the bacterial cellulose production, in the coconut water cultivation of the green and ripe fruit, using a fractional factorial design 27-2. The minerals K and Na were quantified by flame emission photometry (FEP), Fe and Mg by atomic absorption spectrophotometry (AAS), P by molecular absorption spectrophotometry UV-VIS (MAS), S-SO4 -2 by photocolorimetry by barium sulfate, B by the method Azometina-H, NTK by the method Kjeldahl, and, N-NH4 + and N-NO3 - by steam distillation with magnesium oxide (MgO) and alloy Devarda, respectively. In the second step it was made the production and characterization of the biofilms made by the potato starch blend and bacterial cellulose, by planning a model of ternary mixture. The biofilms were characterized according to physical, chemical and barrier properties. In the third step was made the application of the biofilms in strawberries minimally processed, and analyzed the quality indicators (fresh mass, total soluble solids (SST), total titratable acidity (ATT), reason between SST and ATT, pH, thickness, water activity (Aw), total count of aerobic mesophilic, phenolic compounds, anthocyanins, vitamin C, color, CO2 and O2 breathing activity).The bacterial cellulose larger production, 6 g.L-1 , was verified in the oconut water of ripe fruit fermented, added of KH2PO4, FeSO4 and NaH2PO4, kept under agitation. There was a higher consumption of Na and N-NO3 - in both of the fermentation process of coconut water from ripe and green fruit. The biofilms production can be made by the mixture method, configuring a cohesive matrix, with interaction between the compounds. Biofilms with higher concentration of potato starch showed higher density, weight, opacity, solubility and humidity. The bacterial cellulose promoted thick films, with swelling index faster, higher rate of steam water permeability and favored the monolayer humidity reduction. iofilms with higher concentration of glycerol are hydrophilic. The biofilms application in strawberry cv Festival, with composition 47,25% of potato starch, 35,25% of bacterial cellulose and 17,5% of glycerol, was efficient in the fresh mass indicators until 120 hours and, total total soluble solids, total titratable acidity, relation between total soluble solids and total titratable acidity, phenolic compounds, antioxidants, chroma a*, chroma b*, total count of aerobic mesophilic until 192h. The pure bacterial cellulose showed efficient as cover in the parameters of mass loss until 144h and pH, firmness, water activity, anthocyanins, total count of erobic mesophilic breathing activity CO2 until 192h. Therefore, the application of the biofilms made by potato starch blend and bacterial cellulose offers a utilization potential in the conserved strawberries by methods combined (biofilm and refrigeration/cooling), and it can increase the physical, chemical and microbiological stability of the products. Besides, it may favor the consumer acceptance by improving the appearance and properties maintenance. So, the application of the biofilms made by potato starch blends and bacterial cellulose can satisfactorily be employee as protector coating over strawberries.
